We all enjoy a slice of cake as often as we can. However, you’re either staying away from sugar for health or personal reasons and it becomes hard to enjoy something sweet. Our no-sugar carrot cake is everything you love without that pesky sugar making you sick or guilty. It’s the carrot cake texture you love with a whipped cream filling and topping, perfect for any occasion.

No-sugar carrot cake tips

When grating the carrots, make sure to use the grater side with the smallest holes for a better texture. The rest of the dough is easy to mix and you can bake as many layers as you want to. However, make sure to adjust your baking time. The no-sugar carrot cake is ready when a knife or toothpick stuck in the middle comes out clean. Decorate with some grated cinnamon and whipped cream but you can also add various crushed nuts if you’re feeling creative.

This carrot cake is a fuss-free, easy to follow recipe. It is perfect for whipping up if you’re looking for a quick treat that is even ideal for diabetics.

Ingredients

  • 2 cups 2 all-purpose flour

  • 1 cup 1 Xylitol

  • 4 4 eggs

  • half-cup of sunflower oil

  • 20 ml 20 baking powder

  • 10 ml 10 baking soda

  • 5 ml 5 cinnamon

  • 750 ml 750 finely grated carrots

  • 10 ml 10 vanilla essence

  • 500 ml 500 fresh cream – whipped

Method

  • Whisk the xylitol, eggs and oil together, add the vanilla essence.
  • In a bowl, sift the flour, cinnamon, baking powder and baking soda together and stir into the wet ingredients.
  • Add the carrots until combined and divide the batter into two greased 20 cm cake tins. Bake for 30-40 minutes in an oven preheated to 180°C.
  • Once the cake has cooled, ice the cake with the whipped cream and sprinkle with extra cinnamon if desired.
